If having a / partition formatted in something other than XFS is
acceptable for you (it sometimes really is, depending on what you're
doing), then you could simply use the original RH installer and
partition just the / and let the rest of the space unpartitioned,
install the distribution, then download and install the XFS kernel and
tools, partition the rest (/var, /home or whatever you need), format
those things as XFS, mount'em and that's it.
