Nothing major.

You have two outputs from the DG, so you simply send separate video to
each projector. The next thing you do is instead of drawing a quad
buffered stereo view you simply draw two channels to separate portions
of a larger managed area, make sure you select a non stereo video. You
use the 'ircombine' gui to configure a larger managed area which sends
video from each of the areas to the respective video channels and hence
to the projectors. You'll be able to keep your existing code for the
creation of the stereo viewing parameters (modelview and projection
modifications for left & right eyes).

No new hardware is required unless you take the opportunity to go higher
resolution and need more fill or the reduced pixel depth causes some
other problem with a visual you need, this is unlikely since you've gone
to mono from stereo and require smaller pixels.
