A classic text is,

    Computer Graphics, Principles and Practice

by

    Foley, van Dam, Feiner and Hughes

published by

    Addison Wesley

It is used in many univeristy graphics classes both introductory
and advanced. You get everything from 2D to 3D geometry, Image
Processing, Interface design and implementation, and graphics
hardware architecture.
