Several ideas are at work here. Pick and choose from:

1. Compute a mirror projection DCS and change the
    culling mode to be the opposite: cull-front and draw
    back faces.

2. Compute the virtual eyepoint and render a channel
    with that eyepoint. Like this:

     + virtual eye
      \
        \
    -------- mirror
        /
      /
     + normal eye
