John,
I had this problem on a Linux box with a Wildcat graphics card. Turned out
that if there is any 2d graphics going on in your X environment, it would
interrupt the 3d rendering. In my case, I had the system CPU/mem
performance applet going in my GNOME panel. When I turned the applet off,
the spikes went away. However, I haven't seen this problem on our NVIDIA
boxes, so it is probably driver related.
