I ran into this recently and, unfortunately, the dual channel display
option on Odyssey will not work in this case. There is a minimum
pixel input clock rate of 60MHz and 2++at++640x480_60 does not achieve this.

It should be possible to do scan conversion of a higher resolution
signal to 640x480, but the equipment can be a bit costly.
