Reading the UI inputs for 2 people is easy. The complex bit is defining
rules of interaction that integrate the users' inputs, or arbitrate
between them. Simple systems allow only 1 user to interact with each
object at a given time, but that does not allow "cooperative" interaction.
The latter is the subject of a growing amount of research, including some
of my own that has used manual materials handling as a context (ergonomic
design). Within this, the "piano movers' problem" gives a nice task.
This work is not yet published, but for some other studies check out ACM
ToCHI, Presence, + conferences like EGVE and IEEE VR.
