I am using an older iostat and a newer kernel and it works for me:
rpm -qf /usr/bin/iostat
sysstat-3.3.5-3
lord{lord}: iostat
Linux 2.4.11-xfs (lord) 10/10/2001
avg-cpu: %user %nice %sys %idle
0.77 0.00 2.17 97.06
Device: tps Blk_read/s Blk_wrtn/s Blk_read Blk_wrtn

dev8-0 14.44 219.98 25.40 69928 8073
iostat uses /proc/stat to get its info, here is what mine looks
like:
cpu 494 0 1413 97263
cpu0 300 0 528 48757
cpu1 194 0 885 48506

I would check out your /proc/stat, and look at the iostat source,
it may be having trouble interpreting the output.
Steve
p.s. nothing in this part of the system is changed by XFS
