Are you certain that your / xfs filesystem was cleanly unmounted? 
Perhaps if you can get to the shell before the installer tries to mount
it, you can try to manually mount it and see what happens.  You might
also look at the other consoles for any error messages that might be
there.

You might also try removing the label and explicity list the device;
just a wild guess.  :)
