We don't use 'ip' actually, but I can try.. let's install it.. (by the way, it
would be nice if iproute would have entry on freshmeat.net .. i can do it if
you want :)..

root@machine:~# ip tun add XXX mode sit remote 10.0.0.1 local 10.0.0.2
root@machine:~# ip tun ls XXX
XXX: ipv6/ip  remote 10.0.0.1  local 10.0.0.2  ttl inherit
root@machine:~# ip tun change XXX remote 10.0.0.3 local 10.0.0.4
root@machine:~# ip tun ls XXX
XXX: ipv6/ip  remote 10.0.0.3  local 10.0.0.4  ttl inherit

..strange, so it appears as a bug in iptunnel (net-tools 1.60, iptunnel 1.01).
Ok, we'll switch to iproute2 instead - thanks for a hint.
