Erik,
When I was at Fermilab we made our own distro based on Red Hat that does
*exactly* what you want to do - runs scripts inside (and outside) the
chrooted environment at the end of the Red Hat install process. The
only thing we didn't do was add the ability to get user input for
scripts, such as fsintall.
To be honest I didn't work on that part of the distro, but all the work
that was done is open source, of course, and available in the install
source tree:
