I used parted to create the partitions - parted-1.6.15-5 - since fdisk would not
create anything that would format past 2 GB.

Commands to parted were mkpart primary 1 -1 (or similar - used 1 and -1 to get
beginning and end of disk)

Output from /proc/partitions is as follows:
Before the corruption:
major minor  #blocks  name

   3     0  120060864 hda
   3     1     102280 hda1
   3     2  117910800 hda2
   3     3    2047752 hda3
   8     0 2685427712 sda
   8     1 2685425368 sda1

After the reboot (admittedly I did run a mkfs.xfs on this again...)
major minor  #blocks  name

   3     0  120060864 hda
   3     1     102280 hda1
   3     2  117910800 hda2
   3     3    2047752 hda3
   8     0 2685427712 sda
   8     1  537941720 sda1


I just repartitioned the disk and remade the xfs filesystem... mkfs.xfs tells 
me:
[root@bfg2 ~]# mkfs.xfs -i size=512 -f /dev/sda1
meta-data=/dev/sda1              isize=512    agcount=32, agsize=20979885 blks
         =                       sectsz=512
data     =                       bsize=4096   blocks=671356320, imaxpct=25
