mkfs.xfs queries alot of things, and at one point in the code it does
actually know if its writing to a MD RAID5 device. There isn't any
heuristic in there for switching to a sector size that matches the
block size though, we'll need to add that. Its on my list now... ;)

Yep.

You cannot do the former (while contining to use RAID5), so the
latter will be your best bet.
