Nvidia is one of those companies who generate too much headaches for
Linux users. Just think about all the graphic cards related problems
with binary only kernel modules...
The good news is that DMA/UDMA seems to work well with nforce chipsets.
I'm always using XFS enhanced RedHat Kernels and I did not have any
problems. I just enabled UDMA with kernel parameter, IIRC it was
something like 'ide0=ata66 ide1=ata66'.
