FWIW, the Linuxcare Bootable Toolbox CD 2.0 (
http://lbt.linuxcare.com/index.epl ) makes a pretty decent XFS-aware rescue
disc.  You can burn it on a 3" or business card CD and carry it with you.

The "mount host partitions" option in the little menu doesn't work quite
right, but all is well if you go to the shell.  Even though it's pretty
old, it seemed to work fine on a XFS 1.1 machine.  I don't know offhand if
it has things like xfs_repair or xfs_check though.. didn't manage to break
the thing badly enough to need them.

I have successfully completed the transition from Ext3 to XFS, and all
seems to be working fine. I have put the server under heavy load by dd'ing
stuff over NFS from many client machines at once, and everything stays
together, so I think I'll be fine. I kept a backup ext3 / filesystem just
in case something goes wrong and I have to recover from non-XFS rescue
disks.
