Moreover I have the quota daemon running (altho I don't think my problem could 
have anything to do with quotad running or not):

Fileserver:~# ps auxw|grep quota

/usr/sbin/rpc.rquotad

As I already wrote in my original message we're still running stable:

The problem was present with the "stable" quota version (1.65-4) as well as  
with the "unstable" version I compiled myself (3.05-3).
