Edit the top level Makefile. Look for the lines that read:

VERSION = 2
PATCHLEVEL = 4
SUBLEVEL = 9
EXTRAVERSION =-xfs

KERNELRELEASE=$(VERSION).$(PATCHLEVEL).$(SUBLEVEL)$(EXTRAVERSION)

Changing those values and rebuilding the kernel with change the result
of a uname -r.
