What do i need to do to create a separate log file?
Does the log live in a partition unto itself or can I make a log file
on another filesystem that has other data in it? Is there a document
that describes in detail how this goes?

Default log location is in the middle of the partition/volume you run
mkfs on.
If you want an external log then you need to dedicate a partition to it,
it cannot
be in a file.
These are the options for an external log:
mkfs -t xfs -l logdev=/dev/xxx,size=XXXb /dev/yyy
mount -t xfs -o logdev=/dev/xxx /dev/yyy /mnt
