There is a HOWTO that give the general steps for moving an existing ext2 based system to xfs at http://www.gargoylecc.com/Linux+XFS-HOWTO.html

This is not conversion, but rather migration. Since there isn't (and probably won't ever be) a conversion utility the only way to switch an existing system over to xfs is by playing a sort of "musical chairs" with your filesystems. Hope this is helpfull.
