It is overriden by route, which is invisible with "route".
You may delete it with "ip route" but you will not achieve desired
result in any case.

To summarize, it is impossible. System has single route for each destination,
so that deleting loopback route will route packets to the place,
which you ordered, but packets will _not_ be accepted locally.
